Dr. Takayuki Shibamoto is a distinguished emeritus professor at the University of California Davis Department of Agriculture and Environmental Chemistry and Gust professor at China Medical University. He is best known for his chromatography research, which includes identifying volatile components in various plants and antioxidant and food science research. As an environmental chemist, he studies pesticides and dioxins, a cancer-causing agent. He teaches quantitative analysis of environmental toxicants and food toxicology.

“As noted by Paracelsus (1493-1541), ‘All substances are poisons; there is none which is not a poison. The right dose differentiates the poison from a remedy.’” - Takayuki Shibamoto, 1993 (from his book, Introduction to Food Toxicology)

Early Life and Education:

Dr. Shibamoto was born in Shizuoka, Japan, in 1940. He completed a bachelor of science degree in chemistry in 1964 from Yokohama City University. He later earned his master’s and doctorate in agricultural chemistry from the University of California, Davis, in 1972 and 1974. He is a member of the graduate groups in Pharmacology & Toxicology, Agricultural & Environmental Chemistry, and Food Science.

Career:

Before earning his graduate degrees, Dr. Shibamoto was a perfumer trainee in Grasse, France, between 1967 and 1968. Soon after, he served as the head of the analytical laboratory at Ogawa & Co., Ltd., in Tokyo, Japan. He returned to serve as research director at Ogawa & Co. Ltd. after completing a two-year post-doctoral research position at UC Davis. In 1979, he accepted an assistant professor role at  UC Davis. Thus began his teaching and research career at his alma mater.

His primary areas of study are food science, antioxidants, chromatography, gas chromatography, and organic chemistry. His food science study covers botany that intersects with isoeugenol and safrole. His antioxidant study incorporates topics from hexanal, biological activity, pharmacognosy, and cod liver oil. Lastly, his environmental toxicology work focuses on the analysis and fate of pesticides in the environment.

Dr. Shibamoto served as the chair of the department of environmental toxicology at UC Davis from 1988 to 1995. He is a member of the American Chemical Society, Institute of Food Technologists, Society of American Oil Chemists, and Pharmaceutical Society of Japan.

From 1999 to 2001, he was also the UC Education Abroad Program Tokyo Study Center director. He was then the associate editor of the Journal of Agricultural and Food Chemistry from 2009 to 2017. His other appointments include serving as a visiting professor at Oita University of Nursing and Health Sciences at the University of Shizuoka, Japan.

Dr. Shibamoto is the recipient of the 2013 Award for Advancement of the Application of Agricultural & Food Chemistry, sponsored by the ACS Division of Agricultural & Food Chemistry (AGFD).

In 1991, Dr. Shibamoto received a fellow award from the American Chemical Society Division of Agricultural and Food Chemistry for his outstanding contributions to agriculture and food chemistry. He was recognized by the U.S. Department of Agriculture in 1996 with the Group Honor Award for Excellence. In 2013, he received the Award for the Advancement of Agriculture and Food Chemistry from the American Chemical Society. The American Chemical Society recognized Dr. Shibamoto again in 2021 with the Spencer Award. In 2009, Dr. Shibamoto was admitted to the Hall of Fame, USDA IR-4 Minor Use of Pesticides Program.

In 2012, Dr. Shibamoto became a Distinguished Professor at the University of California, Davis.
